    In reply to Barbara Rice. Sounds good. Smart suggestion about the salt. I jave seen recipes where they salt the cabbage, which draws out the moisture and then they pat it dry with paper towels before proceeding with the recipe.

    Coleslaw: equal parts mayonnaise (not "salad dressing"), vinegar, sugar, and cream (or skip the cream and increase the mayo). Season with fennel seeds and/or celery seeds/mustard seeds, plus a judicious amount of cayenne or other hot seasoning. No salt - the vegetables will get watery and lose their crispness.     Mr Tuggle, that was a fantastic read, thanks! I'm wondering if you have explored the region where Middle Creek connects to the Sacramento River. There was a lot of mining in that region as well and I think Middle Creek Road was one of the first County Road. Any thoughts?
