For many years Prather Ranch has been a gem in our north-state culinary crown. Prather Ranch beef is organic. Prather Ranch selects cattle that produce the most tender beef. All Prather Ranch livestock are born and raised there under holistic, sustainable standards and guidelines.

Prather Ranch is a reputable Siskiyou County neighbor. But it’s also a community-minded business. A recent example is its donation of hamburger patties for a Red Cross fund-raising barbecue.

This month Prather Ranch received national attention in a six-page feature inside Food and Wine magazine’s August issue, complete with a story, photos,and, of course, recipes.

James Rickart — whose parents, Jim and Mary, have managed Prather Ranch since 1979 — told us about the magazine article. (It’s a family operation where everyone has specialities, while the group collaborates on large decisions. )

James said Food and Wine staff began the Prather Ranch article with a photo shoot last year. A New York crew of about 10 people flew out West to capture chef Chris Cosentino (an Iron Chef contender) as he immersed himself in every aspect of getting the meat he’d prepare.

Every aspect. Cosentino started at the Prather’s processing plant with a live animal. One year later, fast-forward to a new item in Cosentino’s living room: a Prather Ranch hide – a reminder of the fine animal that provided the beef Cosentino prepared.

Closer to home, Prather Ranch meats are sold at Kent’s Meats on Airport Road in Anderson and the Mt. Shasta Supermarket in Mount Shasta. Moonstone Bistro in Redding serves Prather Ranch-produced hamburger, as does Burger Express on Main Street in Mount Shasta. Prather Ranch meats are also sold online.

And today we can see Food and Wine’s article about Prather Ranch online.

“We at Prather Ranch are quite proud,” Rickart said of Prather Ranch’s Food and Wine debut. 

“It’s a big deal for us to have such a big spread in a nationally read magazine.”
