Cool as a cucumber…Cocktail

I absolutely love a cold delicious cocktail in the summer.  It seems that mixologists are truly becoming more creative with their drink varieties.  Recently I stumbled upon what I think is my new favorite cocktail.  At the restaurant where we were dining, down in Berkeley, the drink is called ‘Endless Summer’  I can see how the drink was so simple to name.  Cucumber and Melon are both in abundance now in our gardens, and what screams summer more than melon! 
I had a similar cocktail that used cantaloupe that was wonderful as well.  I am curious to how a watermelon will fit into this delightful drink.

Cucumber Cocktail

2 oz. Square One Cucumber Vodka
1 1/2 oz. Honey dew melon juice*
1 oz. fresh lemon juice
1/4 oz agave nectar (found at health food stores)
Ice

Place melon juice and agave nectar in a cocktail shaker and muddle for 15 seconds. Add ice,  lemon juice and shake for 15 seconds. Strain the liquid into a chilled highball glass and garnish with a slice of lemon.

* Honeydew juice – Take one cup cut melon and place in blender. Blend on high until pureed. Using a fine mesh strainer, strain mixture into a glass or bowl. Discard remaining solids from strainer. Will yield enough juice for 4 cocktails.
