Manhattan Clam Chowder

4 tablespoons olive oil
1 large onion, diced
1 cup celery, diced
1 cup carrots, chopped
4 garlic cloves, smashed and minced
6 to 8 large potatoes, peeled and cubed into bite-sized pieces
3 cans (14.5 ounces each) diced tomatoes, with juices
2 cups bottled clam juice, or seafood broth
1 cup dry white wine (optional: may substitute chicken broth, water or more clam juice)
