    I made the chicken salad last night using a store-roasted bird. Added dried cranberries, subbed pecans, and used one of my herb blends instead of straight tarragon. Such a tasty, refreshing summer dinner, and enough left over for sandwiches today. And I got a quart of chicken stock out of the carcass.
