Mrs. Redmon’s Baked Macaroni and Cheese

3/4 pound macaroni
2 tablespoons butter
2 eggs beaten
1 ½ teaspoon dry mustard
4 cups grated sharp cheddar cheese (extra sharp is good too)
1 + cups milk

Boil and drain macaroni.  Stir in butter and eggs.  Mix mustard in 1 tablespoon hot water and stir into macaroni.  Butter a casserole dish.

I think the original recipe mixes the cheese into the macaroni at this point; however, we always place in the casserole dish a layer of macaroni, a layer of cheese, a layer of macaroni, a layer of cheese, etc. leaving enough cheese for the top.

Add milk.  Usually only takes one cup, but use your discretion if you need a tad more to keep the casserole moist.

Bake uncovered 45 minutes in 350 degree oven.
