
Realtor Patte Jelavich of ERA Select Properties caved in to my and Kelly’s begging for the recipe for these Tangy Lemon Cookies.
She prepared these for her company’s maiden ArtHop event a few weeks ago. What a wonderful spread Jelavich and company presented, including these cookies, which were a huge hit.
Jelavich said that the cookies we tasted were extra good because her friend with “awesome meyer lemons” shared her abundant harvest.

Tangy Lemon Cookies
1/2 cup unsalted butter, softened 1 cup raw turbinado sugar (or sugar of choice) 1 teaspoon vanilla 1 egg, lightly beaten 1 1/2 tablespoons freshly grated lemon zest 1/4 cup fresh lemon juice 1 1/2 cups whole wheat flour 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/4 teaspoon saltCream together the butter and sugar, add the vanilla, egg, lemon rind, and lemon juice, beating until it is smooth. Into the bowl sift together flour, baking powder, baking soda, and salt blending well. Cover bowl and refrigerate until chilled.
Drop pieces of dough onto baking sheets lined with parchment paper. Allow room for cookies to spread. Place in a preheated 350-degree oven for 8-10 minutes or until the edges are golden. Allow to cool slightly on pan before removing to cooling rack. Makes about 4 dozen cookies.
