Holiday Cranberry Salsa

cranberrysalsa

At a potluck, I served this salsa as a side dish with some creamy chicken enchiladas. I had a bushel of pomegranates and substituted the sweet/tart kernels instead of the orange fruit — it was wonderful!

Holiday Cranberry Salsa

2 1/2 cups whole cranberry sauce
1/4 cup minced red onion
1 medium orange
1 minced serrano chile pepper
1 tablespoon minced ginger root
1 bunch chopped cilantro

Peel and remove the white ring from the orange and finely chop. Mix all ingredients together and chill. Serve with chips or as an alternative sauce with your turkey!

This cranberry salsa is packed with antioxidants that protect your body from free radicals. Cranberries help prevent urinary tract infections, reduce dental plaque and kill the bacteria that causes tumors and cancer in the stomach.

Eat healthy for the holidays and have some delicious cranberries!
