A variety of cooking techniques with a variety of sustainable fish. Learn how to select and store fish. We will sear, shallow-oven poach, grill, smoke and bake. Chef Veale will present Restaurant Elegance in the simplest of preparations, share “tricks of the trade,” and teach accompaniments from the pros!
